Favorite vegetable? That is a hard one because I don't think that there is a vegetable I don't like! LOL! I guess my current favorite would have to be asparagus......

My favorite spring vegetable is radishes. They're so great in potato salad or tuna salad! They grow so quickly!

Although it's not really a "spring" vegetable, more a summer one, I love fresh home-grown tomatoes. They remind me of my home in Georgia and helping my grandpa garden when I was little. He wouldn't allow me into the tomato patch because he was afraid I would step on one. I would stand at the edge and watch the basket as it was filled with those beautiful red things! Makes my mouth water now.

Fiddleheads! I didn't taste them -- or even know about them -- until a few years ago, but since then I've tried to make up for lost time. The season is short for these treasures, so we're already starting to make extra trips to the local green markets to make sure we don't miss out!!!

My favorite spring vegetable is asparagus, especially the white asparagus you can find in the St. Louis area. It doesn't last long, so I buy it at every chance.
